Grilled Lime Mango Bowl

Let’s not end the summer so quickly before making one more tropical dish. This bowl is filled with fresh, tasty flavors that will leave you craving more. The combination between salmon and the fruit salsa with the white rice is magic made in heaven. Enjoy!
Ingredients
1 large mango, peeled, cored, and diced
1/4 red onion, finely chopped
2 tsp fresh cilantro chopped
1/2 red bell pepper, diced
Juice of 1 lime
1/4 tsp sea salt and black pepper to taste
Light drizzle olive, coconut, or avocado oil
Olive oil spray
4-6 oz salmon filets, skin on
1 cup white rice
Directions
Mango Salsa
Chop mango, red onion, red bell pepper, and cilantro
Combine with lime juice, oil, and sea salt
Stir and set aside
Grill Salmon
Clean grill and spray with olive oil spray
Sprinkle salmon with sea salt and black pepper
Carefully place salmon skin-side-up onto grill
Cook for 6 minutes, then turn and cook for another 6 minutes
When done, remove from grill
If you wish to remove salmon from skin, slide fish with a spatula between skin and meat from one end to the other and lift fish to discard skin
Place salmon into a bowl and top fish with mango salsa and a side of white rice to make your yummy bowl!
