Fall Recipe
Roasted Butternut Squash Soup
Nothing says fall quite like a bowl of steaming hot soup. This roasted butternut squash soup is not only delicious but also packed with vitamins and minerals, making it the perfect comfort food for chilly autumn days.
Ingredients:
1 large butternut squash, peeled and cubed
2 tablespoons olive oil
Salt and pepper to taste
1 large onion, chopped
2 cloves garlic, minced
4 cups vegetable broth
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup coconut milk (optional)
Fresh parsley for garnish
Instructions:
1. Preheat your oven to 400°F (200°C.)
2. Spread the cubed butternut squash on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 25-30 minutes, or until tender and slightly caramelized.
3. In a large pot, sauté the chopped onion and garlic in a bit of olive oil until translucent and fragrant.
4. Add the roasted butternut squash to the pot along with the vegetable broth, cinnamon, and nutmeg. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes.
5. Use an immersion blender to puree the soup until smooth. If you prefer a creamier texture, stir in the coconut milk.
6. Season with additional salt and pepper to taste. Serve hot, garnished with fresh parsley.
